Bongo-K-Bobs

Enjoy this NIOSA (A Night in Old San Antonio) recipe! NIOSA celebrates the city’s culture, food and music.

Ingredients
  

  • 3 lbs. ball tip beef cut into chunks (this is a special cut of meat NIOSA uses; top sirloin would also do)

FOR THE MARINADE

  • 1/2 clove garlic minced
  • Juice of 3 lemons
  • 1 chopped onion
  • 1/2 cup olive oil
  • 1/4 teaspoon of each: pepper, salt, oregano and ground cumin

Instructions
 

  • Marinate beef for at least 6 hours. Alternate beef, onion wedges and bell pepper wedges on skewers. Grill over hot coals.
